Chicha Morada

A traditional Peruvian drink brewed with purple corn, pineapple, and warm spices

This beguiling flavor comes to you from Production Manage Jacob. Here’s what he writes:

“This flavor was inspired by my trip to Peru in 2018. While staying there for a month, I saw firsthand how chicha morada is such a ubiquitous flavor in the highlands where it originates.


The national drink of Peru, chicha morada is a deep purple beverage made by brewing mulling spices, pineapple rinds, and purple corn (maíz morado). It is typically served chilled, sometimes with chopped fruit in it similar to sangria. Chicha refers to any brewed corn beverage, sometimes fermented to make a light beer, and sometimes just brewed for the flavor and color. Chicha morada in particular is consumed almost on the same level as Coca Cola in Peru, and perfectly blends the tropical flavor of pineapple with the authentic and cozy flavors of corn and mulling spices. Chicha morada predates the Inca Empire and is a large part of Peru’s cultural identity.


This flavor was fun to develop, using authentic ingredients and finding a way to make the flavor come through in the final ice cream. I started with brewing a big batch of chicha morada, using whole ears of dried purple corn. Then to maximize the flavor, I made it into a sherbet! The final product is a creamy, pinkish purple ice cream bursting with flavor.”

Caramel Chai Biscotti

Masala chai base + biscotti + dark chocolate + spiced rum caramel


This flavor was developed by Production Team member Gabe. As you’ll see, it’s quite a loaded flavor and we think the components work great together. We used looseleaf masala chai tea from our buddies at Summit Spice & Tea for this one, and let our Bake Team show off their stuff by making biscotti ourselves in our own Test Kitchen.


Here is what Gabe writes:


“This flavor was inspired by my love for chai lattes and my experience working as a biscotti baker a number of years back. To me, a biscotti is the perfect pairing for a warm coffee or tea. The spiced rum helps emphasize and support the chai spices.


Looking back on this flavor as my first R&D experience with Wild Scoops, I have to say that it was incredibly fun to brainstorm different cookie options and to taste possible flavors that would complement each. Overall, I enjoyed the creative process and I hope you enjoy my ice cream!”

Bonus: Malted Monster Cookies

Peanut Butter-Oat-M&M cookies + malted chocolate ice cream


One day last summer, my neighbor brought over some monster cookies, and my first thought was that they were super tasty! My second thought was that they would be amazing as ice cream sandwich cookies, and my third thought was that as the owner of an ice cream company, this is something that could actually be made into reality and shared with all of you!


A traditional monster cookie is a peanut butter cookie loaded with oats, M&M's, and chocolate chips. Considered a classic American cookie, these were invented in 1971 by a Michigan father of 6, Dick Wesley. When he tried to make peanut butter cookies, he found he was out of flour (definitely have been there!), and subbed in ground oats instead. The original recipe also called for throwing in extra jam that his kids weren’t eating fast enough, and anything else that caught his fancy or was left over from a meal! Apparently, the dough burned through two regular mixers and Wesley eventually switched to using an electric drill to tame the beast.

Since the cookies themselves have a lot of chunky sweetness going for them, we wanted to keep the ice cream inside simple. I thought of a malted vanilla to keep playing off that "sweet yet wholesome and nostalgic" vibe. Then we did a trial of a malted chocolate, because chocolate definitely fits with this flavor profile, and sometimes we don't use chocolate as much as we ought to (as Club Members are eager to let us know during their feedback). The dark chocolate and malt powder added a layer of complexity, which we all loved!
